Ginger, lemon and honey cake
Ingredients
- 175 g of butter
- 75 g of honey
- lemon zest
- 175 g of flour
- 3.75 ml of ginger
- 2 eggs
For coverage:
- a tablespoon of honey
- Lemon juice
Preparation
- First, preheat the oven to 180 °C. In the meantime, you can prepare the cake dough.
- To do this, melt the butter in a bain-marie.
- Then, when it is almost melted, add the honey and lemon zest and mix it all together.
- Then let it cool and add the remaining ingredients (flour, ginger and eggs).
- Now, grease a baking sheet and then pour the mixture inside.
- Afterwards, place in a preheated oven for about 30 minutes.
- While the cake is baking, prepare the icing. To do this, first put honey and lemon juice in a pan over medium heat.
- Then, when both ingredients have warmed up a little and blended together, the icing is done.
- When taking the cake out of the oven, skewer it with a fork so that it makes holes and pour in the icing so that it soaks through the whole cake, including the inside through the holes.
- The cake should absorb all the liquid in the icing.
- Finally, let it cool down and enjoy!

Cheesecake and Ginger
If you like something different and are a fan of cheesecake or cheesecake , this is your recipe: a cheese and ginger cake that will delight the whole family. Plus, it’s very easy to prepare.
Ingredients
- Gingerbread cookies (about twenty)
- 75 g of butter
- 200 g of Philadelphia-type cream cheese
- 3 tablespoons of liquid cream
- 2 eggs
- 50 g of sugar
- 1 piece of fresh ginger
- Strawberry jam
Preparation
- First, make the base of the cake with the gingerbread cookies. To do this, crush the biscuits until they are well crushed into a powder.
- Then melt the butter. Then add butter to biscuits and mix well.
- Later, in a suitable ovenproof container, create a base from this mixture that was made earlier. The base must be very compact, so you need to press it so that it is even and flat.
- Then, in a bowl, add the eggs, sugar, cream and cream cheese and mix well.
- When the mixture is smooth, grate and add the small piece of ginger and stir to mix well.
- Now pour this last mixture over the biscuit and butter base. Place everything in a preheated oven at 160ºC for about 30 minutes.
- Be very careful and don’t waste your time, because the cake can lose all its liquid and not be juicy. For that, it’s better to check the doneness.
- Finally, take it out of the oven and wait for it to cool. Then unmold and apply a layer of strawberry jam on top.
