Ingredients (for 4 or 5 guests)

  • 1 onion
  • Olive oil
  • 4 cloves of garlic
  • vegetable broth
  • 1 broccoli
  • 3 artichokes
  • 1 pot of peas (125 g)
  • 2 cups of brown rice (400 g)
  • 1 mushroom tray (200 g)
  • 2 medium tomatoes
  • 2 medium carrots
  • 1 red and 1 green pepper
  • 1 cup of pods (200 g)
  • Condiments: salt, black pepper, turmeric or turmeric, sweet pepper.

Preparation

  1. First, chop all vegetables into small pieces, except the pods that can be left in medium-sized pieces.
  2. On the other hand, place a pan with water and boil the beans, without salting or adding oil.
  3. Afterwards, chop the tomato into slices and mash with the help of a hand mixer.
  4. Once the pods are ready, turn off the heat and set aside. Do not drain until the paella is ready.
  5. Then, peel and chop all the garlic into small pieces.
  6. On the other hand, grease a pan and heat it to sauté the peppers and carrots, as they need to cook longer.
  7. Once browned, add the onion, garlic and mushrooms. It is necessary to stir constantly so that nothing burns.
  8. Then, when the vegetables are ready in the pan, add the broccoli, artichoke and peas.
  9. Finally, add rice with a little water. When the rice is more or less cooked, pour in the broth and tomatoes.
  10. Also, stir all the ingredients in a circular motion to mix the flavors and prevent them from burning.
  11. Afterwards, salt to taste and sprinkle a little sweet pepper all over the surface.
  12. Once the broth has dried completely, the paella will be ready. This process can take approximately 20 minutes over medium heat.
  13. Finally, turn off the heat, cover the vegetarian paella with a dry cloth and let it rest for about 10 minutes before serving.

Vegan Paella Recipe

Rice to prepare vegetarian paella

Ingredients (for 3 or 4 guests)

  • ½ onion
  • 1 head of fresh garlic
  • 4 cups of vegetable stock (1 liter)
  • 2 or 3 medium tomatoes
  • ¼ cup of pods (50 g)
  • 2 tablespoons of turmeric (10 g)
  • 1 tablespoon of sweet pepper (5 g)
  • ½ pot of green peas (62.5 g)
  • 1 cup of brown rice or basmati (200 g)
  • ½ red pepper and another ½ green
  • ½ cup of artichokes (100 g)
  • 2 tablespoons of extra virgin olive oil (30 ml)
  • Condiments: salt and black pepper (to taste)
  • Optional: instead of turmeric you can use turmeric

Preparation

  1. First, place the rice to cook in a pot, as indicated on the package (usually it is recommended that for every cup of rice add 2 of water). Don’t let it overcook, it needs to stick to the tooth.
  2. Also, peel and cut the garlic and onion into small cubes. On the other hand, wash and cut the peppers in Julienne.
  3. Also, cut the tomato into thin slices and set aside.
  4. Afterwards, grease a skillet with olive oil and, when hot, saute the onion and garlic.
  5. Once the onion is golden, add the peppers. Let everything cook over medium heat for a few minutes, stirring, until everything is browned.
  6. Also, when the previous step is done, add the tomatoes, cover the pan and cook everything for about 8 to 10 minutes, so that all the ingredients are mixed together.
  7. On the other hand, heat the vegetable stock in the microwave.
  8. After this time, add the artichokes, green beans and green peas. Cook everything over high heat for another 5 minutes. Then add the rice, hot vegetable stock, turmeric and the rest of the spices.
  9. Finally, let the skillet rest, covered, for 10 minutes at room temperature before serving.
