- 2 eggs
- 1/2 cup extra virgin olive oil (100 g)
- 1 tablespoon of sea salt (7 g)
- Seasonings to taste: oregano, pepper, turmeric, basil, thyme, garlic powder, etc.
- 1 glass of water (200 ml)
- 1 cup of rice flour (120 g)
- 1 cup of cornmeal (130 g)
- 1 cup chickpea flour (130 g)
- 1 cup of assorted seeds (chia, sesame, linseed, sunflower, pumpkin, etc.) (120 g)
In this recipe it is not necessary to use any type of yeast, since we are interested in a thin and crunchy bread, like a biscuit.
Method of preparation
The big advantage of this recipe is that we won’t have to knead the dough. So, we can make it all in the bowl of the mixer, since the dough is quite liquid.
- First, place the eggs in a mixer and beat well.
- Add the oil, salt, seasoning and water.
- Separated, in a bowl, mix the three flours well and add them to the rest of the ingredients.
- We can add a part of the seeds to the dough, or even leave them all to the surface of the cookies. This way they will be well toasted and tasty.
- Cover the mixture with a transparent film and place in the refrigerator for 1 hour, approximately, so that it rests and settles down.
- On a large, flat oven tray, place a non-stick paper, grease it with oil so it doesn’t stick, and spread the dough.
- On top, sprinkle all the well-ground seeds.
- Preheat oven to 220ÂșC and bake for 20 or 30 minutes.
- When taking it out of the oven, let it cool and then divide the dough into small pieces.
- If the seeds fall too easily, we can smear them with beaten egg before putting them in the oven.
